Maximize their freshness
We ship our abalone in a moisture-filled, oxygen-rich environment. They will live at least 36 hours from the time they are packed up in Monterey.
When they arrive, shuck your abalone (remove from shell) as soon as you can.
If you can’t shuck them right away: Place the box in a refrigerator within a few hours of arrival. It’s important that the abalone are kept cool.
DO NOT TAKE THE ABALONE OUT OF THE BOX until you are ready to prepare them for eating.

General Prep Tips
Before you begin to process them, put abalone in the freezer for 20 minutes. Cold temperatures make them less mobile.
If things get too slippery, run the ab under water
Before tenderizing, you can slide the ab into a plastic bag to protect it from being cut.
